Green Beans



Green beans were on the menu this morning for the first time.

I ended up quickly defrosting some avocado from the freezer instead.

We'll try green beans again at a later date, but for now I guess we stick with the avocado/sweet potato menu.

    Also...you can freeze avocado?? I never thought of that. Just mash it or cube it? How do you thaw it? Does it get brown? This is exciting news.

    1. I mash up a few avocados at a time and then freeze it in an ice cube tray. It does get slightly brown on top, but the rest of it stays nice and green, so once it is defrosted and mixed up it is still a nice green color. I take out one cube in the evening and leave it in the fridge to defrost or in the morning I put the cube in a zip loc bag in a dish of warm water and it takes only about 10 minutes to defrost completely.
      If you were going to try this for older kids (or grown ups) you could probably add a bit of lemon juice to the mash before freezing and then maybe it wouldn't brown at all? Then you could have avocado at the ready for taco night or whatever.

  2. This is very cool. I will have to try it. Sometimes an avocado ripens before I'm ready for it and then I forget about it and it goes to waste. And I hate wasting avocados. Never thought to freeze it.
